In Munich, they say the Weißwurst shouldn't hear the noon bells. It belongs on the breakfast table, with sweet mustard, a fresh pretzel, and a Weißbier. The proper way to eat it is to suck the meat right out of the skin. Our sausage chain doesn't adhere to any schedule. It hangs all day long.
The casing is made of cream-colored Lycra. Each piece is hand-speckled, just like the delicate herbs in a traditional Weisswurst. Polyester fiber filling gives the sausage segments their crisp texture. We seal the ends of the sausage by hand with a drawstring.
Sixteen links, two meters long. Light, soft, and dimensionally stable. Hang it up, drape it, put it around your neck: it can do it all.
